“I bake.  What’s your superpower?”

If the current climate has you craving some inspiration for a weekend spread than look no further!  The fabulous Jeeny Maltese of My Nutrition Ireland joined us as part of our #AtHomewithBEO series this week and shared with us her go-to recipes for the perfect main and dessert!  Jeeny is an absolute Wonder Woman when it comes to creating delicious dishes minus the guilt and she certainly brought this goodies with these mouth watering creations!  Why not give them a try?!

Morrocan Couscous (Serves 4)

  • 1 Sweet Potato or Butternut Squash Diced
  • 1 Small Onion Diced
  • 1 Green Pepper Diced
  • 4 Tbsp Vegetable Stock
  • A Handful of Raisins
  • 1 Tsp of Turmeric
  • 1 Tsp of Smoked Paprika
  • 1 Tsp of Mild Curry
  • Salt & Pepper
  • Vegetable/Chicken Stock Cube
  • 1 Cup of Couscous
  • A handful of roasted almonds or walnuts

Standard of Procedures

  • Add 1 cup of boiling water to the stock cube and add to the couscous.
  • Cover and set aside for 5 minutes, stir gently and occasionally with a fork to loosen the couscous.
  • Add vegetables, spices and seasoning to a hot pan and steam fry the tablespoons of vegetable stock on a medium heat for 5 minutes.  Add more stock if needed.
  • Ensure squash or sweet potato are cooked and remove from heat.  Mix your couscous and vegetables gently and serve!
  • Perfect with almonds on top and fresh coriander.

Dry Spiced Chicken (Serves 2-4)

  • 1-2 Chicken Breasts
  • 1/2 Tsp Curry Powder
  • 1/2 Tsp Smoked Paprika
  • A pinch of garlic powder
  • A pinch of salt and pepper

Standard of Procedures

  • Rub dried spices and seasoning on your chicken breast.
  • Heat up a dry frying pan on a medium-high heat with NO oil.
  • Cook chicken until golden brown on both sides, 4-6 minutes on each side.

Chocolate Brownie (GF & DF)

  • 2 1/2 Cup Ground Almonds
  • 1/2 Cup Cocoa Powder
  • 1 Tsp Bread Soda
  • 1 Tsp Baking Powder
  • A Pinch Sea Salt
  • 1 1/2 Cup Pitted Dates
  • 1 Cup Boiling Water
  • 3 Eggs
  • 2 Tbsp Coconut Oil
  • 2 Tsp Vanilla Extract
  • 4 Tbsp Maple Syrup

Clean Chocolate Ganache

  • 4 Tbsp Cocoa Powder
  • 2 Tbsp Coconut Oil
  • 4 Tbsp Coconut Milk
  • 2 Tbsp Maple, Honey or Agave Syrup
  • 2 Tsp Vanilla

Standard of Procedures

  • Pre-heat the oven to 160 degrees.  Line a baking tray with greaseproof paper.
  • Just mix all your dry ingredients in a bowl and set aside.
  • Then in a food processor or with a hand blender, blend all your wet ingredients together with the pitted dates and boiling water, eggs, coconut oil, vanilla, maple syrup (if dates are too dry, soak them in the boiling water for 5 minutes bef0re blending).
  • Just mix together your dry and wet ingredients, until just combined.  Don’t over mix.  Pour in mixture into lined baking tin.  Bake at 160 degrees, Gas Mark 3 for 40-45 minutes.  Let cool before decorating with the ganache.
